Pasilla means "little raisin" in Spanish, referring to the dark brown color and raisin-like aroma of the dried pepper. With its rich, smoky flavor and medium sharpness, the dried pepper is often used in Mexican mole sauces. When the peppers are green they are known as Chilaca. The peppers turn from a dark green color to dark brown and almost black when ripe and can grow longer than 8 inches.
