The word Hinkelhatz translates to mean Chicken Heart, which describes it's size and shape.
This variety is one of the oldest hot peppers to be cultivated by Mennonites in Pennsylvania.
The fruits are covered with tiny bumps and wrinkles.
They measure 1-1/4 inches in length tapering to a blunt point.
Peppers are very hot and turn from green to red when mature.
The plant is bushlike, small and compact, measuring 18 to 24 inches tall.
Hinkelhatz is a prolific producer as well as being slightly cold tolerant, which can extend the growing season longer than the average hot pepper. It also boasts resistance to disease and pests .
Hinkelhatz' are used to make a pepper vinegar, similar to Tabasco sauce, and they are excellent stuffed with cream cheese, baked or grilled.
